Evaporators are used to remove solvent from the Food products in the form of vapor. For most evaporation systems, the solvent is water and heat is provided by steam condensation.
Main factors in consideration during evaporator design are:
1. Heat Transfer.
2. Liquid vapour separation.
3. Energy consumption efficiency.
The heat transfer units are called calendria (single tube heat exchanger). The liquid-vapor separation units are called Vapor Separator. Vapor Separator and calandria are combined together form the body of the evaporator.
